The Protected Designation of Origin (P.D.O.) certifies and guarantees a production cycle carried out within a limited area, with certified raw materials and traditional production methods, in compliance with the specific regulations of the sector. "Terra di Bari Castel del Monte" PDO is an expression of the tradition of the Apulian territory. With a balanced taste, with a pleasant spicy aftertaste reminiscent of almonds, it is the ideal oil to be savoured raw on bruschetta, pinzimonio, salads, boiled meats and vegetables.
“Terra di Bari” PDO preserves the ancient method of production of extra virgin olive oil from the Apulian territory. On the foothills of Castel del Monte, the gentle slopes of the western Murge chain welcome centuries-old olive trees of the Coratina cultivar, typical of this place, from which a unique Levante oil is born. The aromas and taste of “Terra di Bari” PDO recall the almonds ripened under the intense sun of Puglia, hints of the tradition of the ancient oil mills.
